 Dad's Awesome Guacamole

Sometimes my dad and I will make some guacamole to go along with out family dinners. Let me tell you, my favorite parts are cutting open and pitting the avocados, then using the shells to sometimes make little avocado-shell boats, mixing everything together and taste-testing the finished product. I sometimes would request a little more salt or lime juice, but I always like the finished guac. Try this recipe, it will be one of your favorites!




4 avocados

Chopped cilantro

Chopped onion

1/2 of a lime

Salt 

1/2 of a jalapeƱo, seeds removed if wanted 

Mango chunks and pomegranate seeds, optional



1. First, cut the avocados in half and pit them. Scoop the avocado into a medium-sized bowl and set the pits aside. Do not throw them away! Then, wash cilantro and separate the leaves from the stems. Chop cilantro leaves into small pieces and place into the bowl with the avocado.

2. Cut an onion in half, take one of the halves and cut it into small pieces. Add to the cilantro and avocado mix. Then, take the lime half and squeeze the juice into the bowl. 

3. Take half of a jalapeƱo and cut into small pieces, removing seeds if desired. Add to the bowl. Mash up the avocado, then mix together the items in the bowl. Add salt as desired, tasting once in a while to see if it is at the right taste.

4. If you want to use mangoes and pomegranate seed, peel the mango, cut the mango, and take half of it. Cut it into bite-sized chunks and add to the bowl. Cut pomegranate in half and scrape out the seeds, pouring them into the bowl. Mix together once more, stirring thoroughly. Serve with tortilla chips. Enjoy!


NOTES:

I like to eat my guacamole preferably with Juanita's Tortilla Chips because they have this amazing buttery sort of taste and are really good dipped in Costa Vida's Cilantro-JalapeƱo ranch ( that last part is just me! )

If you want your guac to be super spicy, do not remove the seeds when you cut up the jalapeƱo.

If you are saving the guacamole for later, place the pits inside the bowl, cover with plastic wrap, and store in the fridge. It keeps for around 3-ish days!
